France:
Brin d'Amour, meaning "a wisp of love." The small wheels are covered with rosemary, fennel seeds, juniper berries, and bird's eye chili.
Also called, Fleur du Maquis, this cheese strikes a wonderful balance for an herb-encrusted cheese, with the flavors and aromas of the herbs subtly enhancing the warm, brightness of the paste. This cheese is a fairly easy partner for many types of wines and pairs exceptionally well with Tempranillo.
Spain:
Valdeón is a rich, creamy, cow and goat's milk blue cheese.. The Valdeón wheels are wrapped in Sycamore leaves, which contribute to their appearance and complex flavor. Valdeón pairs well with wines made from the gamay grape, such as Beaujolais and Muscat. This cheese is delicious with smoked and cured meats.
Monte Enebro:
Monte Enebro is a moist, semi-soft goat's milk cheese from Avila, Spain. It’s bluidh gray rind comes from the same mold that is used in making Roquefort. It is a great robust goat cheese with spicy, creamy amd lemony tones. Great with a sweet wine like Sauternes, or a sweet sparkling wine.
Italy:
Robiola la Rossa is soft bloomy-rind cheese made from a blend of sheep’s and cow’s milk. It is wrapped in cheery leaves that have been steeped in brandy and the earthy aroma is just sinful.
USA:
3-Corner Field Farm is nestled in the Battenkill River Valley on the border of New York and Vermont. Where sheep are raised with care and respect on beautiful, organically managed pastures, and never given hormones or unnecessary antibiotics. They are raised the old-fashioned way: outdoors, on pasture, eating natural grass, clover, and alfalfa.
White Buck is similar in appearance to a French Bucheron, but smaller and a bit sweeter when young. The fresh chevre in the center slowly yields it's youthful tang to a robust maturity as it ripens from the rind inward.

Hoch Ybrig is a mountain cheese made from cow's milk in Canton Schwyz, Switzerland, and washed in a white wine brine. Our’s is aged by Rolf Beeler in Zurich. . Hoch Ybrig is robust, nutty and is excellent in a fondue. Try it with a French baguette and a glass of Gewürztraminer.
